Job Description
We are recruiting on behalf of our client, who has an opening for a Sous Chef or a Junior Sous chef looking to take the next step, in their independent seafood restaurant. A popular restaurant for locals and visitors alike, this establishment is renowned for its fresh, locally sourced fish and shellfish.
Previous experience as a Junior Sous or Sous Chef in a similar establishment is of course essential. An ideal candidate would not only be passionate about seafood and delivering a smooth service, but also about ensuring the success of the restaurant. As you’ll be working alongside the Head Chef, and standing in for them in their absence. Effective communication, using your initiative and managing the team well under pressure are attributes an ideal candidate would possess.
As Sous chef, your role would be to:
Run the kitchen in the absence of the Head Chef, and ensure high standards are consistently met. This includes managing the team/overseeing service and ordering etc.
Have knowledge of Health, Safety and Hygiene regulations, and check the cleanliness, stock control and organisation of the kitchen
Train new staff and help them to develop their career
Skills, Experience and Demeanour:
Achieved at least an NVQ 2 in professional cookery
Strong background in high quality restaurants and bistros, with a focus on fish
Management experience, so as to lead the team well and develop skills
Able to consistently produce numerous dishes with relative speed during busy periods, but without comprising the quality or presentation of the dishes
Experience of planning a menu that can be altered in line with locally sourced goods
Be a people person, have a calm manner and enjoy working well as part of a team
Successful individuals will be able to demonstrate the following:
Experience of preparing and cooking a variety of fish dishes and sauces
A passion to learn and develop
Can cover different kitchen sections
Package:
Salary: £25,000 - £28,000, depending on experience
Hours: 45-50 Hours per week, 5 days out of 7
Holidays: 28 per annum (inclusive of Bank Holidays)
Further benefits: An equal share of the tips and paid over time
